How very… Interesting…

Apparently, there is an Official Ramen Homepage. I stumbled across it while conducting menu planning for this weekend’s backpacking trip, looking for something that uses Cajun Chicken flavored Ramen (I have three packs of the stuff where I normally stock only two). Although I didn’t find a recipe on there for Cajun Chicken Ramen (I didn’t look very hard and Google had so many more promising results), I’m sure there’s one around there somewhere, and besides there are so many others. One under the alcohol category even promises to be a hangover cure, which is really quite amusing. I ended up picking this:

Chicken Fiesta Ramen Noodles
1 pound boneless chicken breasts, chopped
2 Tablespoons olive oil
1/2 cup canned corn, rinsed & drained
1/2 cup canned black beans, rinsed & drained
1/2 cup red bell pepper, chopped
2 packages Cajun chicken flavored noodles, cooked according to pkg
,drain
Sauté chicken in oil over medium heat until golden brown. Add
remaining ingredients and cook 4 minutes. Add noodles and seasoning
packets and heat through.
Top with sour cream and salsa.

No sour cream on the trail, I don’t like bell peppers, and canned chicken eliminates the olive oil and saute chicken part besides keeping better. Otherwise, it looks good if a bit heavy on account of the cans and salsa bottle. But hey, it’s only a weekend trip and I can cheat a little. Besides, it’ll make me the envy of the entire Troop probably: they told me they use Mountain House dehydrated food. That’s great stuff for a proper backpacking trip of several days, but you can cheat a bit on the weekend short trip like I will if you’re willing to carry a little extra. On top of that, it uses one pot, which is a golden rule to keeping cleanup minimal, and it has most of the necessary nutrition: Ramen for carbs, chicken and beans for protein, corn for a veggie with fiber plus more carbs, and salsa because… It’s salsa. Some things just are. ;) Throw in a tea bag for after dinner when it should be getting nice and cold with a low in the 40s and you’re on to something real nice, you know what I mean? Especially after the planned 12 miles.

I’ve also upgraded to an LED light bulb for my trusty angle-head flashlight. The thing is hilariously bright now; I’ll have to get a picture up at some point for the hell of it.
